Challenge: Food Materials, Ingredients, or Additives That Give Beverages the Flavor Characteristics of Beer

NineSigma, representing a leading beverage manufacturer with sales of trillion yen (“Client”), seeks food materials, ingredients, or additives that impart the “flavor characteristics of real beer” to beverages. The Client aims to create non-alcoholic beer with the flavor characteristics of real beer and welcomes a wide range of proposals on food materials, ingredients, or additives (including extracts and flavoring agents) that can contribute to the creation of such beverages.

With the recent rise in consumer health consciousness, non-alcoholic beer sales have been growing. None of the existing non-alcoholic beers is truly like real beer, however.

The flavor characteristics we find in real beer are described in different ways (e.g., fermentation flavor, depth, and richness of flavor, spreading aroma, smoothness, refreshing feel and aftertaste, complex flavors created by a combination of various natural ingredients). No existing non-alcoholic beer has all of these characteristics.
